The Product
Products containing solids surrounded by a sauce or gravy, such as stews, ragouts or soups are packaged as cryogenically frozen, but loose, particles. The user puts the product into a kettle, pot or warmer, adds the required amount of water and brings it up to temperature. It is then ready to serve. The product is manufactured in a special machine that combines particles, such as diced meat or vegetables with elements that, when combined with water and heated, make the sauce or liquid component. The result is a uniform loose product that may be reconstituted in any amount, if desired. In other words, half the container may be combined with half the water to make half the amount. The process is unique and is covered by patent backed up by a team with over 50 collective years of experience working with the technology.
Here's what this means to you:
- Cryogenic Freezing Captures Flavor at its Peak Each Just-In-Time ingredient is prepared to its optimum point then Individually Quick Frozen (IQF) at cryogenic temperatures. This rapid freezing drastically reduced product damage. It is hard to tell it has been frozen.
- Brilliant Product Because subsequent processing takes place in the frozen state no element of the product is over cooked or held too long at too high a temperature. This means the vegetables have bright color and the bean sprouts have crunch.
- Fast Reconstitution Because the product is loose, rather than in a block, the water surrounds small particles, and the combination reconstitutes in 10% of the time block frozen products take in any size.
- Saves Waste Just-In-Time reconstitution means you need only commit what you know you can use. If you need more, just enough can be made quickly to meet needs. And your customers are assured of a fresh product at its best, even at the end of the day.
- Save Shipping Costs The water you add has already arrived. Net shipping weights are substantially less than serving weights, and the package is more compact.
- Bulk Packs Save Money Each pack makes 20 to 25 portions; each case 160 to 200 portions, and for Just-In-Time flexibility any amount may be made at once.
- Chilled Versions Start the Clock Later Local commissaries make up product Just-In-Time for daily chilled distribution. The heat of reconstitution resets the bacteriological clock. Order quantities can be adjusted every day for the next day.
